Video Discription | Cooking Can Be Fun! with Eldene CUCUZZA 1 Cucuzza, Peeled and cut into bite-sized pieces. Discard any large, tough seeds. 3 T. Olive oil 1 med.-sized onion, chopped 3 cloves fresh garlic, minced 1 can stewed tomatoes Fresh basil, thyme, & oregano 1 teaspoon brown sugar Salt Black Pepper, Freshly ground 3 med. potatoes, cut up 3 cups water 1/2 cup Vermicelli, broken into pieces Fresh parsley and sweet basil, minced (add just before serving) Grated Italian Cheese (when on individual plates) Sauteโ onion over medium heat in olive oil until soft and wilted. Add minced garlic. Cook about one minute. Add stewed tomatoes, basil, thyme, & oregano. Stir well. Cook on low to medium heat Add potatoes, water, salt, pepper, and brown sugar. When it comes to a boil, lower heat to med./low and cover. When potatoes are almost tender, add cucuzza. After it starts to simmer again, test seasonings then add vermicelli. When vermicelli is cooked, add minced parsley and sweet basil. Serve in soup plates. Top with grated cheese. NOTE: I usually serve it with cornbread. |
