CHALIMIDI RECIPE WITH SECRET INGREDIENT - RICE FLOUR SWEET | PAKAM CHALIMIDI RECIPE WITH RICE FLOUR AND JAGGERY | CHALIMIDI SWEET - చలిమిడి
Chalimidi is usually prepared as prasadam during festivals like Sri Rama Navami, Vinayaka chathurthi etc. It is a tradition in Andhra to give Chalimidi during baby shower as it is considered to act as a coolant for the would-be mom.
There are 2 versions of chalimidi, one is uncooked or pachi chalimidi and the other is paakam chalimdi which involves making jaggery or sugar syrup, which can be quite tricky for beginners.
🌺INGREDIENTS🌺
250 grams Rice Flour
125 to 150 grams Jaggery
2 tbsp Urad Dal Flour, roasted (Sunnu Pindi)
2 tbsp Sesame Seeds, Optional
1 tbspPoppy Seeds, dry roasted
1 tbsp Ghee
1/4 Cup Dry Coconut Pieces
🌺My Tips🌺
👉 Getting the rice flour consistency right is very essential for the preparation of this dish. The finer the rice flour, the better the Chalimidi. Otherwise, it can taste grainy.
👉Usually the proportion of the rice flour to the jaggery is 1:1/2 works best according to me. Increase by another 1/4 cup if you want sweeter. Some people also make with 1:1 ratio, but that’s too sweet according to me!
👉The consistency of the jaggery syrup is essential in thickening the chalimidi after adding the rice flour.The jaggery when dropped into water should form a perfect ball and not be runny.
👉Do not add lots of water while making jaggery syrup.
👉Instead of finely chopped dried coconut, fresh coconut pieces can also be used, but the shel life decreases.
👉Do not miss out adding sunnu Pindi, it gives a very good flavour to the Chalimidi.
👉You can also add dry fruits of your choice,but traditionally only coconut bits are added.
👉Cardamom is usually not added, but if you wish you can add 1/2 tsp cardamom powder.
🌺Variations🌺
👉You can prepare chalimidi with sugar.
👉You can also make the uncooked version which is knoown as Pachi Chalimidi. Take a bowl, add freshly ground fine rice flour. Add grated coconut, powdered sugar and cardamom powder and mix. Add a little ghee and mix well. Add little milk, tsp at a time and make a soft dough. Offer this as prasadam.
