Please see the recipe below: John Wayne Casserole Ingredients: 1 1/2 lbs ground beef 1 taco seasoning packet plus water according to directions 1 (16oz) Pillsbury Flaky Grand refrigerated biscuits 1/2 cup sour cream 1/2 cup mayo (Duke's of course!) 1 1/2 cup Colby cheese, shredded and divided 2 medium-sized tomatoes, sliced 1/2 white onion, diced 1/2 green bell pepper, chopped jarred jalapeno slices 2 tablespoons olive oil Directions: 1.) Preheat oven to 350 degrees. Grease 13x9" casserole dish. 2.) Take four of the biscuits and pull each in half. Place at the bottom of the casserole dish and press slightly expand size. Bake in the oven for 8-10 minutes or until lightly browned. Remove and set aside. 3.) In a large skillet, brown the ground beef. Drain. Add taco seasoning and water. Cook and stir for a few minutes. Remove from heat and set aside. 4.) In a small bowl, combine the mayo, sour cream, and 1/2 cup of the cheese. Set aside. 5.) Slice tomatoes and set aside. 6.) Chop the bell pepper and dice the onion. Saute in olive oil for several minutes until tender. Remove from heat. 7.) Assemble the casserole as follows: Push down on the biscuits slightly to flatten Spread the ground beef on top Place the tomatoes in a single layer (salt & pepper if desired) Spread the sauteed bell peppers and onion on top of the tomatoes Spoon the sour cream mixture on and spread evenly Spread out the jalapenos slices on top Sprinkle the remaining 1 cup of cheese Take the remaining 4 biscuits- pull each one apart into two pieces and cut the pieces in half. Place around the outside edge of the casserole dish, slightly overlapping one another. 8.) Bake uncovered for 25 to 35 minutes or until the biscuits are golden brown and the casserole is thoroughly heated. |
