For badusha to soak in the sugar syrup the dough has to be flaky if we make a very smooth dough the badusha will have a smooth surface and will look nice but will not have the cracks and ridges which are essential for absorbing the sugar syrup. I have added some cardamom and saffron to the sugar syrup and lemon juice is added to prevent the sugar from forming crystals when cooled.
