Here's a simple recipe for a pan vegetable pizza that doesn't require yeast:
Ingredients:
For the Dough:
- 1 cup all-purpose flour
- 1 tablespoon baking powder
-1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 tablespoon curd
- 1/4 cup olive oil
For the Sauce:
- 1 cup tomato sauce
- 1 teaspoon dried oregano
- Salt and chili flakes to taste
# For the Toppings:
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced bell peppers (any color)
- 1/2 cup sliced red onions
- 1/2 cup sliced mushrooms
- 1/2 cup sliced black olives
- 1/2 cup cherry tomatoes, halved
- 1/2 cup spinach leaves
- 1 teaspoon dried oregano
- Olive oil for brushing
Instructions:
Prepare the Dough:
1. **Mix Dry Ingredients:** In a large mixing bowl, combine the flour, baking powder, and salt.
2. **Add Wet Ingredients:** Add the curd and olive oil to the dry ingredients. Mix until a soft dough forms.
3. **Knead the Dough:** Turn the dough out onto a floured surface and knead for about 2-3 minutes until smooth. If the dough is too sticky, add a little more flour as needed.
4. **Rest the Dough:** Let the dough rest for about 10 minutes.
Prepare the Sauce:
1. **Mix Ingredients:** In a bowl, combine the tomato sauce, oregano,, salt, and chilli flakes. Adjust seasoning to taste.
Assemble the Pizza:
1. **Prepare the Pan:** Brush a 12-inch (30 cm) cast iron skillet or a round pizza pan with olive oil.
3. **Shape the Dough:** Roll out the dough on a floured surface to fit your skillet or pan. Transfer the dough to the skillet or pan, pressing it to the edges.
4. **Add the Sauce:** Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
5. **Add the Cheese and Toppings:** Sprinkle the shredded mozzarella cheese over the sauce. Arrange the bell peppers, red onions, mushrooms, black olives, cherry tomatoes, and spinach leaves on top of the cheese. Sprinkle dried oregano over the vegetables.
1. Place the pan on very low flame for 10-12 mins.
2. **Finish and Serve:** Remove the pizza from the oven. Let it cool for a couple of minutes before slicing and serving.
