INGREDIENTS:
For Ginger Chutney -
* Oil (तेल) - 1.5 Tbsp
* Fenugreek Seeds (मेथी दाना) - Some
* Chickpeas Lentils (चना दाल) - 1 Tbsp
* Black Gram Beans (उड़द दाल) - 1 Tsp
* Coriander Seeds (धनिये के बीज) - 1 Tbsp
* Cumin Seeds (जीरा) - 1 Tsp
* Ginger (अदरक) - 60-70 Gm
* Red Chili (लाल मिर्च) - 4-5 Nos.
* Tamarind (इमली) - Some
* Jaggery (गुड़) - Some
* Garlic (लहसुन) - 4 Nos.
* Salt (नमक) - As Per Taste
* Water (पानी) - 1 Cup
For Coconut Chutney -
* Coconut (नारियल) - Some
* Ginger (अदरक) - Some
* Green Chilli (हरी मिर्च) - 2 Nos.
* Tamarind (इमली) - Some
* Chickpea (चना) - Some
* Salt (नमक) - As Per Taste
* Water (पानी) - As Required
For Tadka -
* Oil (तेल) - 1 Tbsp
* Mustard Seeds (राई) - Some
* Cumin Seeds (जीरा) - Some
* Roasted Chickpeas (दालियां) - Some
* Black Gram Beans (उड़द दाल) - Some
* Red Chili (लाल मिर्च) - 2 Nos.
* Asafetida (हींग) - Some
* Curry Leaves (करी पत्ता) - Some
For Punnugunu -
* Dosa Batter (डोसा बैटर) - 2 Cup
* Curd (दही) - 2 Tbsp
* Cumin Seeds (जीरा) - Some
* Asafetida (हींग) - Some
* Salt (नमक) - As Per Taste
* Onion (प्याज) - Some
* Coriander Leaves (धनिया पत्ती) - Some
* Green Chilli (हरी मिर्च) - As Required
* Curry Leaves (करी पत्ता) - Some
* Refined Wheat Flour (मैदा) - 1 Serving Spoon
* Rice Flour (चावल का आटा) - 1 Serving Spoon
* Baking Soda (मीठा सोडा) - 1 Pinch
For Instant Punnugunu -
* Curd (दही) - 1 Tbsp
* Rice Flour (चावल का आटा) - 1 Serving Spoon
* Refined Flour/Maida (मैदा) - 1 Serving Spoon
* Semolina (सूजी) - 1 Tbsp
* Salt (नमक) - As Per Taste
* Cumin Seeds (जीरा) - 1 Tsp
* Roasted Chickpeas (दालियां) - 1 Tbsp
* Asafetida Powder (हींग) - Some
* Onion (प्याज) - Some
* Coriander Leaves (धनिया पत्ती) - Some
* Green Chili (हरी मिर्च) - As Required
* Curry Leaves (करी पत्ता) - Some
* Baking Powder (बेकिंग पाउडर) -1/4 Tsp
* Water (पानी) - As Required
✍🏻𝐑𝐄𝐂𝐈𝐏𝐄:
𝐅𝐨𝐫 𝟏𝐬𝐭 𝐂𝐡𝐮𝐭𝐧𝐞𝐲, keep the pan for heating, add Oil, Methi Dana, Chana Dal, Urad Dal, Dried Coriander, Cumin Seeds, chopped Ginger, dried Red Chili, Tamarind, Jaggery, Garlic, Salt, and Water. Cover and cook on a slow flame by covering it. Then keep it cool grind well and take it out into a bowl.
heat a tadka pan, add Oil, Mustard Seeds, Cumin Seeds, roasted Gram, Urad Dal, Hing, dried Red Chili, and Curry Leaves, and let them crackle first. Give the tadka to the Pachadi and enjoy!
𝐅𝐨𝐫 𝟐𝐧𝐝 𝐂𝐡𝐮𝐭𝐧𝐞𝐲, take a mixing jar and add fresh Coconut, Ginger, Green Chili, Tamarind, Bhune Chane, Salt, and Water. Grind well and take it out into a bowl.
heat a tadka pan, add Oil, Mustard Seeds, Cumin Seeds, roasted Gram, Urad Dal, Hing, dried Red Chili, and Curry Leaves, and let them crackle first. Give the tadka to the Pachadi and enjoy!
𝐅𝐨𝐫 𝐏𝐮𝐧𝐮𝐠𝐮𝐥𝐮, take leftover Dosa/Idli Batter to the bowl. Add Curd, Cumin Seeds, Hing, Salt, chopped Onion, Coriander Leaves, Green Chili, Curry Leaves, White Flour, Rice Flour and Baking Soda. Make small balls and fry them in medium heated oil till they turn golden in color.
𝐅𝐨𝐫 𝐈𝐧𝐬𝐭𝐞𝐧𝐭 𝐏𝐮𝐧𝐮𝐠𝐮𝐥𝐮, in a bowl, add Curd, Rice Flour, Maida, Sooji, Salt, Cumin Seeds, roasted Gram, Hing, Onion, Green Chili, Curry Leaves, Coriander Leaves, Baking Powder and Water. Heat oil and fry them until they turn golden and crispy. Serve with 2 types of Pachadi/Chutney and enjoy! In this way, Andhra Pradesh special Punugulu/Punukulu will be ready with two types of Pachadi/Chutney.
