Music: https://www.bensound.com/ Chicken Tikka Masala Serves 2 For Marinating Chicken Tikka 300g boneless and skinless chicken breast diced into cubes 1 tsp ginger & garlic paste 1 tbsp plain yoghurt 1 teaspoon turmeric 1 teaspoon Kashmiri chilli (or 1/2 teaspoon ground red chilli powder) 1 teaspoon garam masala 1 teaspoon coriander powder 1 teaspoon of salt 1 tablespoon vegetable oil For the sauce 3-4 tablespoons of vegetable 2 small onions (or 1 large onion) finely diced 4 tomatoes finely chopped/minced 1 tablespoon ginger & garlic paste 2’’ cinnamon sticks 3 bay leaves 5 cloves 5 green cardamoms 2 teaspoons garam masala 1 teaspoon turmeric powder 2 tablespoon ground coriander 1 teaspoon Kashmiri chilli (optional for colour and flavour) 1 teaspoon ground red chilli powder (adjust to your taste preference) 1 teaspoon salt 2 tablespoons plain yoghurt 1 onion diced 1 green pepper diced 1 tablespoon freshly chopped coriander INSTRUCTIONS 1. In a bowl, combine chicken with all of the ingredients for the chicken marinade, let it sit in the marinade for 10 minutes to 2 hours (or overnight if time allows) 2. Spread marinated chicken on a baking tray and put into a preheated oven at 200 degrees Celsius for 15 minutes. 3. In a heavy bottom, pan/skillet heat up oil and add whole masalas and fry them on a medium flame for 2 minutes. 4. Add finely chopped onions, sprinkle with some little bit of salt to help draw out moisture and cook faster and fry for 5 minutes on a high heat and then put the heat down and fry until light brown. 5. Now add ginger and garlic paste and fry for 2-3 minutes/until raw taste is gone. 6. Add powdered spices and stir for 30 seconds and splash some water to avoid burning of spices. 7. Add finely chopped tomatoes and fry until softened or disappeared and oil comes on the surface of the sauce. 8. Pour 1/2 cup of warm water and mix everything and let it simmer for a couple of minutes. 9. Put the heat down to low and add yoghurt and stir continuously. Cook it on low flame or yoghurt will split. Cook for 5-6 minutes. 10. Now add chicken tikka into the pan and add 1/2 cup of water, cover and simmer for 3-4 minutes. 11. Now toss diced peppers and onion in a pan over high heat, sprinkle with some salt and scorch them (3-4 minutes). 12. Add them to your sauce and stir the curry, sprinkle freshly chopped coriander leaves and your tikka masala is ready.
