For ocean going activities, even though a diesel electric on batteries is quieter than any nuclear powered submarine, every time a diesel sub has to either surface or snorkel to run the diesels to charge the batteries they are relatively easy to find. I say relatively as it is still a big ocean. Here, the essentially unlimited endurance of the nuclear submarine wins out over the non-nuclear powered submarine. For littoral regions, especially short-term, you cannot beat a diesel-electric submarine. But, all things considered, the stealthiest submarine (at least known) is probably the Gotland class submarines of the Royal Swedish Navy.
